Move over Spritz: why the Italian Hugo cocktail deserves the spotlight!

When you think of Italian aperitivo, chances are the Spritz comes to mind first. It’s everywhere, from Venice to Rome, clinking glasses filled with orange fizz flood Instagram feeds and café tables. But tucked quietly behind the Spritz’s fame is a lesser known gem: Hugo! And if you ask me, it’s time this delicate, refreshing cocktail got the attention it truly deserves.
What is a Hugo?
Hugo is a light, floral aperitivo cocktail made with:
Prosecco
Elderflower syrup
Sparkling water
Fresh mint leaves
Lime or lemon slices
Served over ice in a large wine glass, it’s the kind of drink that feels like a breeze on a warm afternoon. Crisp, aromatic, and subtly sweet. I personally love it!
This cocktail was born in the early 2000s in south Tyrol, a region in northern Italy known for its alpine charm and bilingual culture. Created by bartender Roland Gruber as a refreshing alternative to the Spritz, the Hugo quickly gained popularity in the Trentino-Alto Adige area and beyond, though it never quite reached the global fame of its orange cousin.
And that’s a shame. Because while the Spritz can be bitter and bold, the Hugo is gentle and elegant. It’s the kind of cocktail that doesn’t shout, but sings.
Why I love Hugo (and you might too)
I’ve always found Hugo to be the perfect balance of flavors. The elderflower syrup adds a floral sweetness without overpowering, while the mint and citrus bring a fresh, zesty lift. It’s versatile, ideal for summer terraces, cozy winter evenings, or even as a festive drink during the holidays.
Unlike the Spritz, which can feel heavy or overly bitter depending on the mix, the Hugo is consistently light and easy to drink. It’s my go to aperitivo all year round, and I often wonder why it hasn’t become more mainstream. But I have to admit, I kind of like the fact the few people know this drink, it kind of make it more special!

Base > Hugo: Prosecco + elderflower syrup vs. Spritz: Prosecco + Aperol/Campari
Flavor Profile > Hugo: Floral, fresh, slightly sweet vs. Spritz: Bitter, citrusy, bold

How to make a Hugo at home
Making Hugo is very simple and the ingredients are very easy to find! Also making its alcohol free version it's easy! Here is the classic recipe you can try:
Ingredients:
150 ml Prosecco (for the alcohol free version you can replace Prosecco with a neutral not too sweet fizzy soft drink!)
15 ml elderflower syrup (use less or more syrup depending on how sweet you like it)
30 ml sparkling water
Fresh mint leaves
Lime or lemon slices (I personally love it with lime!)
Ice cubes
Instructions:
Fill a large wine glass with ice.
Add elderflower syrup and sparkling water.
Pour in the Prosecco.
Stir gently.
Garnish with mint and lime or lemon.
Sip and enjoy, preferably with good company.
Aperitivo culture in Italy
In Italy, aperitivo isn’t just about the drink, it’s a ritual. It’s the pause before dinner, the social glue of the early evening. Whether you’re in a bustling piazza or a quiet village bar, aperitivo is about slowing down and savoring the moment. Relaxing after a long busy day.
The Hugo fits beautifully into this tradition. It’s light enough not to spoil your appetite, but flavourful enough to feel special. And if you’re looking to impress your guests or simply treat yourself, it’s a wonderful alternative to the usual ones.
